Energy Bars Recipe

The trick with this recipe is that it is so flexible, you can change things around, take out things you don’t like and add something new. Although there looks a lot of things to buy, you are only using a small amount so that means that it becomes a store cupboard recipe and depending on what you have to hand you can be inventive with your flavours.

  1. 50g desiccated coconut
  2. 50g sesame seeds
  3. 50g sunflower seeds
  4. 50g pumpkin seeds
  5. 15g linseed
  6. 80g cranberries
  7. 30g dried apricots
  8. 100g sultanas or raisins
  9. 2tsp ground cinnamon
  10. 350g rolled oats
  11. 170g brown sugar
  12. 175ml honey, any will do
  13.  175g unsalted butter
  14. In a large saucepan melt the honey and butter over a gentle heat for about 5 mins, once melted turn up the heat for a couple of minutes to that it boils and into a smooth thick sauce.
  15. Mix all of the dried ingredients in a large bowl so that it is evenly combined.
  16. Using baking paper line a large shallow tray, either 23x40cm or two 30 x 19cm trays.
  17. Empty the mixture into the tray and press with your hands to flatten and evenly spread.
  18. Place in the oven at 190, Gas Mark 5 for 25-35 mins until firm and has turned golden brown.
  19. Once out of the oven loosen the edges away from the side of the tray with a knife and leave to cool for about 10 minutes.
  20. Whilst the Energy mixture is still slightly warm cut into bars, we prefer squares approx. 5 x 5cm – bite size, no waste. But that’s your choice!

Ideas for changing the taste…

  • 1 stem ginger chopped into small pieces
  • Goji berries replace one of the seeds
  • Dried blueberries replaces apricots or cranberries
  • Nuts are great such as walnuts, macadamia, almonds
