The trick with this recipe is that it is so flexible, you can change things around, take out things you don’t like and add something new. Although there looks a lot of things to buy, you are only using a small amount so that means that it becomes a store cupboard recipe and depending on what you have to hand you can be inventive with your flavours.
- 50g desiccated coconut
- 50g sesame seeds
- 50g sunflower seeds
- 50g pumpkin seeds
- 15g linseed
- 80g cranberries
- 30g dried apricots
- 100g sultanas or raisins
- 2tsp ground cinnamon
- 350g rolled oats
- 170g brown sugar
- 175ml honey, any will do
- 175g unsalted butter
- In a large saucepan melt the honey and butter over a gentle heat for about 5 mins, once melted turn up the heat for a couple of minutes to that it boils and into a smooth thick sauce.
- Mix all of the dried ingredients in a large bowl so that it is evenly combined.
- Using baking paper line a large shallow tray, either 23x40cm or two 30 x 19cm trays.
- Empty the mixture into the tray and press with your hands to flatten and evenly spread.
- Place in the oven at 190, Gas Mark 5 for 25-35 mins until firm and has turned golden brown.
- Once out of the oven loosen the edges away from the side of the tray with a knife and leave to cool for about 10 minutes.
- Whilst the Energy mixture is still slightly warm cut into bars, we prefer squares approx. 5 x 5cm – bite size, no waste. But that’s your choice!
